And to achieve this irreproachable quality, the daily actions of the master-affineur are performed in keeping with the spirit of tradition, but also according to strict hygiene standards in place. Fromage Gruyère Ltd. is the first manufacturer of Gruyère AOP to be certified ISO 22000 FSSC.

Fromage Gruyère SA distinguishes itself by working with mainly AOP  cheeses. With the AOP or Appellation d’Origine Protégée (Protected Designation of Origin), all the players – milk producer, cheese-maker and affineur/ripener alike commit to supplying a quality product.

Regular controls are conducted by the Interprofession du Gruyère, the trade association for Gruyère AOP, in order to ensure that the specifications are adhered to. The Interprofession du Gruyère also pays monthly visits to classify Gruyère AOP that is four months old and determine its quality.
